Gram’s Ginger Cookies

A Christmas Favorite

Ingredients
1-cup butter (226 g)
1-cup white sugar (198 g)
1-cup brown sugar (213 g)
1-cup molasses (340 g)
2 tsp. ginger
1 tsp. cinnamon
1/2 tsp. allspice
1 1/2 tsp. cloves
2 egg yolks +
1 whole egg

1/4-cup milk mix & reserve with (57 g)
1 tsp. Vinegar

5-cup AP flour (600 g)
1 tsp. baking powder
2 tsp. Baking soda

Directions
Mix together first ten ingredients; add 2 c flour and 1 tsp. baking powder, mix well. Add 2 tsp. baking soda to the reserved milk then add milk mixture alternately with 2 c flour mixing well after each addition; then add last cup flour as needed to make dough stiff enough to roll. Chill dough, roll and cut into shapes.

Bake at 375º  for 10-12 min. When cool frost.

Frosting
2-cup sugar (396 g)
1/2 cup water (114 g)
2 Tbsp. corn syrup
2 egg whites
1 1/2 tsp. vanilla

Combine sugar water and corn syrup. Boil slowly until spins thread 8 inches min. (at 242º). Cover the pan for the first 3 minutes to prevent crystals.

Beat egg whites stiff then continue beating while adding hot syrup; add vanilla and continue beating until it holds shape.
