D'Amico & Sons Turkey with Dried Cherries Pasta Salad
Poppy Seed Dressing:
2 cups mayonnaise
2 tablespoons Dijon mustard
1/4 cup powdered sugar
1 ounce Champagne vinegar
1 ounce water
1/2 teaspoon black pepper, finely ground
1/2 teaspoon poppy seeds
2 teaspoons kosher salt
Mix together all the ingredients for the dressing. Stir to combine.
Salad:
1 pound Rotelle pasta, cooked
1 tablespoon olive oil
8 ounces turkey breast, diced into 1/2 inch cubes
3 ounces dried cherries
1/2 cup yellow onion, diced medium
1/2 cup celery, diced medium
1/2 cup almonds, whole toasted
Cook the pasta "al dente", toss in olive oil and cool completely.
Combine pasta, turkey, cherries, onions, celery and half the almonds in a large bowl. Mix in dressing to desired consistency. Taste for salt and adjust if necessary.
Transfer to a serving dish and top with the remaining almonds.
Serves: 4-6 people (It makes a ton, enough for a party)
