Granny’s Rice Pudding
Did not turn out well. Not at all like Granny's
Many Point Scout Camp Style
2 cups milk
1/2 cup white rice (not par-boiled rice)
2 egg yolks
1/2 cup half and half cream
1/4 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon lemon juice
Cinnamon for top
- In a saucepan, cook the milk and rice until the rice is soft. (Approximately one hour over low heat. Stir often).
- In a small bowl beat egg yolks, cream, sugar and salt till combined.
- Add egg yolk mixture the the cooked rice and bring to a boil.
- Boil for three minutes.
- Remove from heat.
- Stir in the vanilla and lemon juice.
- Place pudding mixture into serving bowl and top with cinnamon.
